Chicken Biryani - Dum

Ingredients:

Ginger Garlic Paste
Garam Masala
Salt
Red Chilly Powder
Lemon
Biryani Masala
Pudina Leaves
Coriander Leaves (Kothimeera)
Green Chillies
Fried Onions
Oil
Yogurt
Ghee
Biryani Color
Milk

Step1: Marinade
Take the cleaned medium size chicken pieces into a big bowl.  Remove all the water from the chicken pieces using a tissue paper or a cloth.  There should not be even a drop of water.  If required clean individual piece with a tissue paper.  Add good amount of ginger garlic paste to it and mix well.
Now add garam masala, salt and red chilly powder and mix it.  Now add a table spoon of lemon juice and mix it.  Next add biryani masala, pudina leaves, coriander leaves, few green chillies and mix well.  Next add fried onions and mix it.  Now take sufficient quantity of oil and mix it well.  The oil should be visible in the marinade.  Keep it aside for 5 mins with lid closed.  Then, add three table spoons of yogurt and mix it well.  Put this mix for about 1.30 hours.

Step 2:Biryani Rice
Soak basmathi rice in water for 45 mins.(4 cups)
Take 5 cups of water in a bowl and add a table spoon of oil, a table spoon of lemon, garam masala, pudina, coriander leaves and salt and mix it well.
Put the bowl on stove and bring it to boiling.
Now add soaked basmathi rice to water and cook until rice is 40% cooked.
Switch off the stove and take the rice in a bowl and store the left over masala water.

Step3:Cooking Biryani
Take the chicken marinade in a big bowl.  Now add the 40% cooked rice to it.  On top of the rice add garam masala, ghee, fried onions, lemon, pudina leaves, coriander leaves.  Add a pinch of biryani color to two table spoons of mix, stir and add the colored milk to the big bowl.
Put the big bowl on stove and cook it with high flame until hot vapor is seen.
Then reduce the flame to medium and cook it for abt 20 mins.
Keep checking if the sides and the bottom is over cooked with a fork or knife.
Keep a tab on rice.  If it is not cooking properly add the left over masala water in step2 to the bowl.  If it still does not help cook rice, add a small cup of milk.
Put the stove in low (sim) flame and cook it for abt 15 mins.
Keep the lid of the big bowl closed always during the process of cooking.
Switch off the stove when the rice and chicken is cooked.

Step 4: Serving
Take the cooked biryani from the big bowl into aluminium tray and mix it well.  Keep the aluminium tray closed with a aluminium foil and serve hot.

The quantities are not mentioned.  You can increase or decrease quantity of chillies, masala depending on your spicy requirement.
